Banana Peanut Lamb Casserole


  • 2 tablespoons oil
  • 1 pound lamb, cut into bite-sized pieces
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon paprika
  • 1 cup beef broth
  • 1 cup diced tomatoes
  • 2 medium bananas, sliced
  • 1/2 cup crunchy peanut butter
  • 1/4 cup chopped fresh cilantro


  1. Heat the oil in a large skillet over medium heat.
  2. Add the lamb to the skillet and cook until it is browned on all sides.
  3. Add the onion, garlic, cumin, coriander, cinnamon, ginger, turmeric, and paprika to the skillet and cook for 2-3 minutes or until the onion is translucent.
  4. Add the beef broth, tomatoes, and sliced bananas to the skillet and stir to combine.
  5. Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes or until the lamb is tender.
  6. Stir in the peanut butter and cilantro.
  7. Preheat the oven to 350°F.
  8. Transfer the lamb mixture to a casserole dish.
  9. Bake the casserole for 20-25 minutes or until it is heated through.
  10. Serve hot with rice or bread. Enjoy
