Ingredients:
- 2 tablespoons oil
- 1 pound lamb, cut into bite-sized pieces
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon paprika
- 1 cup beef broth
- 1 cup diced tomatoes
- 2 medium bananas, sliced
- 1/2 cup crunchy peanut butter
- 1/4 cup chopped fresh cilantro
Instructions:
- Heat the oil in a large skillet over medium heat.
- Add the lamb to the skillet and cook until it is browned on all sides.
- Add the onion, garlic, cumin, coriander, cinnamon, ginger, turmeric, and paprika to the skillet and cook for 2-3 minutes or until the onion is translucent.
- Add the beef broth, tomatoes, and sliced bananas to the skillet and stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes or until the lamb is tender.
- Stir in the peanut butter and cilantro.
- Preheat the oven to 350°F.
- Transfer the lamb mixture to a casserole dish.
- Bake the casserole for 20-25 minutes or until it is heated through.
- Serve hot with rice or bread. Enjoy
